I’ve been craving for something chocolatey these past few days, but couldn’t get myself to actually eat an actual chocolate candy bar or any chocolate flavored dessert for that matter. Remorse is something I really don’t want to deal with right now (😂) plus I’m trying to follow a stricter diet in the next few weeks. I’ve been a little loosey goosey with my food choices lately (ugh). I get lazy days, too. 😣✌
So anyway, last night, while daydreaming about chocolate, I thought of how it’d be so good to have a bowl of warm and chocolatey champorado. However, that meant basically eating spoonfuls of extra sugary white rice that just doesn’t help my “I’m trying to follow a stricter diet” plan.
But since I was determined to have my champorado and thankfully, always willing to try and make healthier versions of dishes/recipes I love, I present to you, my Skinny Champorado.
My first idea was to use multigrain red rice from Benguet instead of white malagkit rice (because that’s our rice at home), but that’s still rice. If I wanted to make a significantly healthier champorado, then I’d have to replace the rice altogether. Next option was quinoa, but didn’t have any on hand plus it might be too soft and mushy for this particular dish. I then thought of rolled oats, sure, but still a bit too mushy so I wasn’t too convinced.

As I’ve said several blog posts back, one of my goals in life is to encourage more people to eat healthier. What most people don’t like about eating healthy are: 1) they think healthy food just doesn’t taste good; and 2) they feel that there is lot of work involved in the prep.
You see, these days, healthy food is not anymore limited to just boiled or steamed (aka boring) protein and veggies. More and more people are starting to embrace living healthier so you’d be surprised at the amount of delicious, and easy-to-prepare recipes you can find online if you only actually just googled it!✌😊
So let me share with you my super simple and tasty recipe for cold soba salad. This noodle salad bursts with flavor and is quite filling, but takes no time to make. Great for either pre or post workout and a perfect match for this unbelievable summer heat! ☀

Happy 2017! My first post of the year is also going to be my first ever recipe post. One of the things I knew I wanted to do when I thought about starting this blog is sharing my own healthy recipes; grub guaranteed to have low to zero refined carbohydrates, sodium, fat, and sugar, yet nutritious and still delicious! I think encouraging people to eat healthier and to make healthier food choices will be more effective if they found out for themselves, through my recipes, that it can be done and that eating healthy need not be boring. Most people have an aversion to healthy food and wouldn’t touch it with a 10-foot pole because they’re under the impression that it’s bland and unpalatable. I want to change that.
Switching to healthier food choices may take some getting used to, especially if you have been accustomed to eating fatty, salty and/or starchy food for a long time. Healthy food might not be as appetizing as a juicy charbroiled cheeseburger or classic southern fried chicken at first, but if done right with lots of creativity, it won’t at all be as repulsive as some expect it to be (and it won’t leave you with with an icky and guilty feeling after!). It will take some time to retrain your palate, but hopefully, my recipes will help make healthy eating more exciting for you.
For my first recipe, I wouldn’t want to scare you away with anything too leafy and raw, so I will start with Fried Caulirice. Cauliflower “rice” or just “caulirice” is a low calorie and less starchy alternative to rice. It’s finely chopped/almost minced cauliflower prepared to look, feel, and taste like rice. It’s filling and neutral-tasting, just like rice, so it could carry seasoning or flavors well.
